Yup, my little girl is now a

TEENAGER!

And to keep  with our family traditions, we partied all weekend!

We celebrated Erinn’s actual birthday at Cousin Kim’s. The girls had some friends over and surprised her with an ice-cream cake!

his first car!

Yes, he has a year to wait, but he can practice driving it as soon as gets his permit and

can do some work on it while he waits…

very impatiently….LOL

Needless to say, he is THRILLED

We were blessed with a beautiful Easter Weekend!

Easter Sunday was relaxing. Matty was Worship Leader at our Church Service. We then swapped our Easter clothes for shorts and spent the rest of the day outside! Mom and Dad had an Egg Hunt for the kids, and then we enjoyed a delish Easter Dinner!

I used the Dough Cycle on the Bread Machine yesterday, and I have to admit, I was a bit nervous. Pulling the Recipe from the Bread Lover’s Bread Machine Cookbook, it produced two nice size pizza doughs! I had my doubts, when Matty had a friend over, that there would be enough. Should I serve something else to go with the meal? I was out of Lettuce?..Ugh, Now I am over thinking it!

But then I remembered growing up, with my Italian grandmother & Aunt Tessie, when this was a meal that fed many of us on a cold Friday or Saturday night (granted, with their experience in our big Italian appetites, they probably made more than two pies worth of dough, but hey, I am learning) Then it dawned on me, this is what it’s all about..those kind of memories. Sure they will remember when I ordered pizza out too, and they will also probably attach to this fond memory that they had to eat some popcorn afterwards because they were still a  little hungry 😳 , but it will be  a fond memory nonetheless, if it kills me!!!! hehehe

Ok, got a bit off track there..So as I was making it, I had eyes on me from the Pizza Maker, himselfWAYNE! It was kind of nerve-racking, he was watching every move I made. I apparently make pizza a lot different than he does! It came together great and all five of us + one friend were all piled in the kitchen laughing *note* these are those fond memories I was talking about 😉

Now the moment of truth….Hubs was the first to taste test…and he LOVED it! He even complemented me on my homemade dough, which he does not know how to make! Success!!! I think this just might make it into my vault of fond memories too!

Basic Pizza Dough

1 1/3 c water          1/4 c extra virgin olive oil

3 1/2 c all-purpose flour          1 tbl sugar               1 1 /2 tsp salt

2 tsp yeast

Dump in Bread maker, programmed on dough cycle.

When machine beeps, take out right away and put on lightly floured surface, and separate into two doughs. Cover with damp towel and let rise for about 20 minutes.  I then put doughs in 2 quart-size baggies sprayed with pam, and then threw in fridge until dinner time.

When Ready to Eat, preheat oven to 425 degrees. Spray two cookie sheets with Pam, then roll out dough into rectangle shape, and place in pan, you can then stretch to fit. Cover with sauce and your choice of cheese and toppings. I just used shredded Mozzarella and grated parmesan. Bake for about 10-12 minutes, until your cheese is bubbly and the bottom of the crust is no longer pale white

Ticked Off…..

*BEWARE*  this is a major VENT

Matty needed a “Re-Cert” for Lacrosse. For those who don’t know, a Re-cert is just a slip a paper signed by the doc that is used each sport season between the year the actual Physical was taken. It states that he hasn’t had any problems since the last physical and that he is still cleared for sports. So I drop off to the Pedi, first thing Monday AM…call Tuesday AM, still not ready. SO I head there later that day around 2pm, nothing but I will wait. I am now running out of office to run it back to school so he doesn’t miss any valuable practice time. (He is now playing GOALIE!)

When I get in the car, I see the wrong info on the paper! They used my wrong son to fill out the Re-cert! Which is annoying for two reasons 1) It has the wrong original physical date, which would nullify the re-cert, so it HAS to be corrected and 2) it is a bit concerning that they did not notice that my 7yr old son was playing Varsity Lacrosse??? What else do they miss? Yes, I know they are human, mistakes happen, but Geez..not today. So back in I go. Now they are all pointing fingers and arguing behind the desk, which leads to a very uncomfortable situation. But it is corrected and I am back on my way…

Well, Practice just ended, and he comes home and says this isn’t good enough! WHAT??!! They don’t have his current physical on file, a new one needs to be done! Fisrt off, they had to have the new one for Football, Second it clearly stated when his last physical was taken on his amended re-cert..so that means that they LOST it! It’s not the money …the forms just need to be re-filled out by the pedi because he does have a current physical, but it will now take DAYS to fix! The pedi office will have me wait a minimum of 3 days easy! Then it needs to be verified by the school physician…Un-freakin-believable! Like I have nothing better to do, than run around like a mad woman and the worst of it? HE is missing practice!

 *Edit* I have decided a little Cone Zone always makes it better 🙂

Well, our bathroom re-model is taken a bit longer than I hoped for, but it is finally moving along! It has been a lot of hurry up and wait. We had to wait until after our Superbowl party to even start. We needed the 2 bathrooms for sure, with all of us! It then took a weekend to rip out and cut out the old bath tub and shower, the walls and the floor. Walls and floor went up, then down because of a leak in the upstairs bathroom, new copper pipes were put in downstairs, lights were moved and re-wired. Then to wait again for the NEW tub to be installed!!!! Well that day has come! Our new tub and shower was installed yesterday! Oh what a beautiful sight! Now Hubs can finish spackling, put up the tile board on the walls, install the floor, I can paint and then the toilet & vanity can go in!!!

My kids are NOT big soup eaters, but this they love..and I also realized  this is an almost meatless recipe. Another meal I can add to my list! This meal cost about $10, and fed all of us, plus of good amount of leftovers!

3 boxes value size Au Gratin Potatoes

2 cups of milk

2 cups chicken broth

4 cups water

6 slices of bacon

3 small potatoes, cubed

 1/4 cup chopped onion (optional)

In a large saucepan, chop up raw bacon and onion (optional) and cook on med/high until crunchy. There is usually not a lot of grease, but if so, drain a little off. Add the rest of the ingredients, cover, and cook on low/med for about an hour, stirring occasionally, chopping up the potatoes as you go. When ready to serve, I like to stir in a cup of shredded cheddar .

That’s it! Easy, right? Yumm..*I like to top mine with crumbled cheeze-its*
